If I had to guess, I would say there is a problem with the hplip scanner
driver that sometime causes simple-scan to crash. Unfortunately problems
with the scanner driver can easily take

the all-in-one device HP Deskjet F4580 is supported through HPLIP, so it does
work with simple-scan. I did read through your how-to for reporting bugs: ran a
test session with xsane - no problems.
However, after trying to reproduce the crash with simple-scan it worked

This seems to be a Hardware Issue, i.e. Simple Scan does not support
your scanner perfectly -- or possibly not at all.
