Thanks Andreas for clearance, but neither Calc nor Excel does that when
replacing. In fact there is no such option there, and this is set as
default in Gnumeric, in separate (hidden) tab. Doesn't look that great
to me

You are replacing "gnu" with the empty string "". The ' you are seeing
indicates that the content is a string, ie. that the cell contains the
empty string "" rather than is empty itself.
If you would want to replace "gnu" with empty, you need to uncheck "keep
strings as strings" checkbox on the "A
