You are replacing "gnu" with the empty string "". The ' you are seeing indicates that the content is a string, ie. that the cell contains the empty string "" rather than is empty itself. If you would want to replace "gnu" with empty, you need to uncheck "keep strings as strings" checkbox on the "A
