Can you get a backtrace of the hang?
Try this:
$ sudo apt-get install evolution-dbg evolution-data-server-dbg
$ gdb evolution
(gdb) set logging on
(gdb) run
... hang ...
(gdb) thread apply all bt full
and attach the gdb.txt to the bug report.

When you check you mail from exchange and your mailbox is very big, it
takes ages to sync your mail. Exchange looks asif it dies and if you
click around in it, it looks like it has stopped responding.

Nope, nothing gets written to the status bar. Evolution effectively reacts
assif it has stopped responding. So the frontend doesn't do anything.
