128x128 px is just fine. I'm referring to the default icon placed in
/usr/share/pixmaps. Obviously this isn't high priority issue, but I
thought I would bring it up since I always end up replacing the icon so
it looks nice in my dock.

In the source tarball there is a 128x128 px vlc icon, but we do not
install it. Is 128x128 big enough for you?
