It IS possible to change this in Wine Configuration. (In the "About"
tab, of course, where it doesn't belong.)
The strings should be changed to something like:
Change owner in Wine Configuration About tab
Change organization in Wine Configuration About tab

Not sure how it should handle this cross-platform, though. It would be
different for Gnome, KDE, etc. Letting this be changed in the utility
would be a good start, though.
