It sounds like no environment variables are helping so you can remove
them all.

With MUTTER_DEBUG_ENABLE_ATOMIC_KMS=0, it doesn't work.
With MUTTER_DEBUG_FORCE_KMS_MODE=simple it works, no bug. If I
understood correctly, this last command is not functional with mutter
42.
So I didn't put anything in /etc/environment. IT WORKS -> NO BUG.

Whoops. Actually MUTTER_DEBUG_FORCE_KMS_MODE=simple should not work
because that feature didn't exist in Mutter 42.
Please try this instead:
MUTTER_DEBUG_ENABLE_ATOMIC_KMS=0
