This was back in Blender 2.45 in Hardy Heron.
Now I use Blender 2.46 on Intrepid Ibex.

Did have some issues as well with applications not showing up in the
applications menu. In my case, I had to manually edit the XML file found
in /usr/share/applications for some applications. Blender might be one
of them. What is in the file "/usr/share/applications/blender-
fullscreen.desktop"?

Yes, I am using Ubuntu 8.04 "Hardy Heron" and Blender 2.45-3ubuntu1 from
the Ubuntu repositories.
$ dpkg -l "blender"
ii blender2.45-3ubuntu1 Very fast and versatile 3D modeller/renderer
I just uninstalled and installed again, when I was writing this post.
It still does not add any menu
Are you using Ubuntu Hardy and blender 2.45-3ubuntu1 from the Ubuntu
repositories?
I cannot confirm it, there are two entries for blender in the GNOME menu
(one for window mode, the other for fullscreen)
