I am experiencing the same bug with 24.04.01 LTS. Using Gnome-Tweaks to
change the icon theme is reverted to Yaru after clicking the Appearance
tab in Settings.

24.04.01 LTS - Same bug with the difference that the icons (using candy-
icons) reverts only when selecting the "Appearance" section in Settings.
