I've installed Evolution 3.44.1-0ubuntu1 from the proposed updates and
text now displays background as expected. This is resolved for me.

Please provide more details as I am unable to reproduce this bug with

Thanks, it seems similar to
https://gitlab.gnome.org/GNOME/evolution/-/issues/1835 which has been
fixed in git and will be provided as a stable update when the next
release is out
One workaround was also suggested
