It is installed and I already used it to check and remove the
extensions.
gnome-shell memory at 6.6 GB this morning after reboot yesterday
evening.
settings.txt:
org.gnome.shell always-show-log-out true
org.gnome.shell command-history ['electrum', 'libreoffice', 'densify',
'rpi-imager', 'sudo
Please check the Extensions app to ensure all but the Ubuntu extensions
have been disabled.
If you can't find the Extensions app then you can install it with:
sudo apt install gnome-shell-extension-prefs

I uninstalled all the non-default extensions and deleted the extensions
folder as you said.
