Because this is intermittent I'll try running with the non-Ubuntu gnome
UI for a few months and see what happens.
I like the upstream gnome hidden dock anyway, but there may still be
Ubuntu customizations somewhere because I still have minimize, etc that
are not in gnome-fedora.

Thanks. gnome-shell was still running when you shut down. Only one error
I can see in that log might suggest a freeze, which is bug 1871262.

I rebooted as requested by upgrade and the bug reporter found this;

The 2 bars were frozen but the already open app and the mouse pointer still
work.

Thanks for the bug report.
First please check that you don't have any extensions aside from the
three Ubuntu extensions installed. Look in the 'Extensions' app and also
run:
cd ~/.local/share/gnome-shell
rm -rf extensions
then log in again.
Second, you seem to be using a Xorg session(?) so
Nothing in /var/crash.
