Ubiquity is now unmaintained as it has been replaced by either the
Ubuntu Desktop Installer or Calamares starting

grub-install: error: cannot copy `/usr/lib/shim/mmx64.efi' to
`/boot/efi/EFI/Boot/mmx64.efi': No space left on device.
which suggests the partition used for the EFI loader hasn't enough free
space, did you manually partition or was that autocreated?
