I now managed to get a working PXE setup for Groovy that runs the Subiquity installer with an autoinstall configuration. I documented my findings in detail at https://askubuntu.com/q/1292032. My solution can be used both for UEFI and BIOS systems and also mentions how to install a desktop system.
