I had the same problem yesterday, although I could not reenable the
second monitor with the xrandr command. I had to restart my computer.

I experience a similar bug, as soon as I enter fullscreen mode, the secondary
display configured using xrandr gets disabled.
Also, the fullscreen display is not actually fullscreen, but it's squished
horizontally.

AFAICS from the gnome bug, this is a bug in Totem and not in the video
driver. Except your error message in kern.log which comes from the
drm/radeon module in the kernel.
