This is ancient. Evince in 8.04 honours cups settings and prints beautifully
(well almost).

I can confirm this in 7.04. Evince (and gtk-demo, so this probably isn't
really an evince bug) use settings from /etc/cups/lpoptions rather than
the ones from ~/.cups/lpoptions.
