I am using Ubuntu 15.10 and I am getting this problem when Adwaita theme is
selected.
I I change the theme to Ambiance then the text in Software Center is readable
whoever I loose the ability to re-size some windows like Nautilus and Tweaks
using the mouse.
I am using nvidia binary driver ve

This is a issue with the softwarecenter/ui/gtk3/widgets/cellrenderers.py
backend code. It appears to be the lack of support for setting "context"
to the right selection state.
