"arecord|aplay" gave noticable delays.
In windows "listen to this device" option works like a charm without any
delays (on hardware level?)

I don't know what exactly has changed but now I can clearly see desired
profiles in configuration.
Now could you advice how could I get Input-to-Output passthrough?
In Windows I simply tick the "Listen to this device" option.
How it can be done in Ubuntu?

Sorry for the delay.
Tested the sound card in windows with original drivers.
I'm able to record stereo via S/PDIF and play 7.1 via analog jacks
simultaneously.
As well as passthrough and upmix s/pdif digital stereo to analog 7.1
So hardware is actually support this.
