As noted by Miguel Tadeu, the openerp user has to be logged out first,
otherwise dpkg will keep throwing errors.
So to uninstall openerp-server on my Ubuntu 10.10 32bit desktop, I ran :
$ sudo skill -kill -u openerp
and then I was able to remove openerp-server using:
$ sudo apt-get remove openerp

I tried to uninstall an application using $sudo tasksel. I had unchecked
the entry in tasksel and selected next, but it ended up removing all
packages on the system. I was too late to notice it. So I used
Ctrl+Alt+F1 to fall back to the shell and ins
Changing keyboard method to scim-bridge brought back all functions,
including GTK panel, notification icon and hotkeys.
