It appears the opposite is true. Only the built-in Intel GPU is active
so any secondary monitor connected to the Nvidia GPU won't work...
Please open the 'Additional Drivers' app and use it to reinstall the
Nvidia driver. Try choosing one that's not the "Open" Nvidia
Upstream thinks this should be fixed in mutter 44.1, but we're yet to
confirm.

environment variables used.

I have executed a ubuntu-bug lightdm as requested here:

In my case I did nano /etc/systemd/system/display-manager.service and
double checked Restart=Always was on (it was) and added RestartSec=0.5
Next time the problem happens, before rebooting please run:
journalctl -b0 > journal.txt
or after rebooting:
journalctl -b-1 > prevboot.txt
and attach the resulting text file here.
