I havent done this either, but my first step would be to convert your
hairiest RedHat system to a VM, then snapshot it.
Then try all your voodoo magic incantations on the VM - roll it back
when you get wrapped around the axle and try again.
In this way you will develop & test your secret sauc
There are several sites that seem to have cut and paste commands you could just
copy into a script and then test from there.

So we bundled our RHEL->CentOS migration with a simultaneous
Satellite->Katello migration, but I think this is what we did just for
RHEL->CentOS:
yum -y remove rhnlib abrt-plugin-bugzilla redhat-release-notes*
# drop in centos yum repo files, remove RHEL repo file here
yum clean all
yum -y install
I haven’t a suggestion I’m afraid.
