Yes, I´ll do ambisonics and I´ll stay analogue as much as I can.
There is a motive, but it is an artistic one. So, seems non sense to try to
explain it here.
You will just throw stones in my head just for that idea.

Make a mic mount with an iPhone holder, and you can use compass and gyroscopes
as well as GPS.
That way you have location data and mic orientation data captured and can
auto-transform the signal based on that.
Just be sure to turn off the mobile phone radio, because GSM signaling causes
nasty
