I want a setup in which each communication will be done peer to peer.
will either rtpproxy or mediaproxy satisfy that condition? If not, can i
configure a STUN server and do it?

It depends on the NAT. If the NAT is a symmetric NAT you need a medi
You have to install and configure a media relay, e.g. rtpproxy or
mediaproxy.
Just take a look at the default script, it contains configuration for
rtpproxy.
