As far as I know, you can easily disable copy/paste feature.

You only need to
launch your vm with disable-copy-paste option, like this :
qemu -spice
port=5932,disable-ticketing,disable-copy-paste

Yet there is something we concern about the data security, spice-vdagentd
enables the capability to share clipboard data between SPICE
