I use postfix, I think general opinion is that it's a little simpler than sendmail for a beginner (which I certainly was), plus it's had fewer security issues that I've been able to find. I do the same thing you want to do, but with Exchange behind it on a box running Redhat 9.0, Postfix and Spama
