Above all, you need an office scanner with an ADF unit, or a
standalone unit that will just drop a PDF on a network share. Office
copiers do that nowadays...

Our scanner is in a different room with all the stuff for printers, we
usually need multipage scanning and there are three problems :

You have not said what scanner you are using? It might be possible if
it has buttons to modify the backend to wait for button presses
between scans.
