I am using MAC OSX Panther version 10.3.4 and would like to use my
Agfa Scanner T 2500. I have installed the SCSI card Adaptec 2904U. The
scanner is detetced at the SCSI port but when I start the software

that you simply did:
scanimage > out.pnm
In that case, the backend uses the default settings for scanning,
which is about the size you see and what I see in the logs.
If you want to scan more, use either the scanimage options or

according to your logs, it seems, that at least the autodetection did not
work, this means, that some basic settings are not correct, esp. the
parport_pc driver, which seems to be loaded correctly has often been
reported to work after setting it's I/O addr and IRQ "by hand":
