Glad to hear that you have found tires that you like.
I also use Maxxis Crossmarks, and like them very much.
I use them only occasionally, since fat tires and my wooden fenders don't
go together very well.
Velo Orange says that they're working on wide 29er fenders. I'm looking

Nice pics and nice bike. I've been thinking about an off road bike. A Hunq
is at the top of my list, but will probably end up with something off
craigslist for a couple hundred bucks... it'l be mostly for tooling around
with my kids BMX style... jumps, mud, etc.
