I was going to suggest something similar as Bob. Take the Metro North all the way to Wassaic and get off there. You could do a nice loop in the rolling farmland of eastern Dutchess County and go into NW Connecticut and even Western Massachusetts and make it back to the train station and home in

How about Taconic State Park - Rudd Pond (just north of Millerton, NY), followed by Bash Bish Falls State Park further north? (I've been to the former, but not the latter.) You can take the Metro North train to Wassaic, and a good portion of the route from Wassaic to Rudd Pond to Bash Bish is
