The front will be built with a dynamo hub and the rear will likely be the
ever reliable and familiar Shimano hub.

It's for rim brakes and has always been for rim brakes. I've always preferred
wider rims for wider tires, like about what Velocity now gives for
recommendations.

I am currently running a Dyad up front and Cliffhanger in the rear with
50mm Big Bens. It's been all good. I'm just under 200 lbs. I've got Shimano
XT V brakes which nail either rim IME.

Any of the rims you mention should be up to the task, and I think it mainly
comes to down which you think is the prettiest. I chose the Atlas for my
Hunqapillar due its versatility, and I like the brushed silver opposed to
the polished or black options for the Cliffhanger or the slight aer
