Tubeless tape isn't very expensive. As mentioned I'd use it over Gorilla.
And inflation can be difficult with a standard pump. I have a small
compressor, and I also have a Topeak Joeblow Booster, which allows you to
pump a chamber to high psi and let it out in one blast to seat tubeless
tires.

i would say make yourself ready for asking yourself why you decided to go
tubeless :). the learning curve in my garage was hours long. get ready for
tight tires (Conti 5000) that are impossible to get on rim. or get ready

when you remove it. Lots of residue left on the rim that will need to be
stripped off with acetone. Analog sells tubeless tape at a very reasonable
price. One roll will do at least a dozen wheels.

Depending on what brake levers you have, you may not have to reverse them,
too. My Paul and Shimano short pull levers don't jut out but my Sunrace
linear pulls do so they kinda get in the way with the Riv-erse shifter set
up. However I was able to scooch the shifters up the bar enough to clear
ODI makes ribbed grips with a flange. These are the long ones, but I feel
like I saw a short version somewhere recently

My question was directed to Tom or Marc about the Soma Buena Vista. I do
not believe the Platypus would be flexy because it has a different top tube
design. Same with the Handsome She-Devil. I'm looking for everything I want
in one bike and it is very difficult to find! That's to be expected.

I had a 55cm Cheviot and it was one of the stiffest bikes I've ever owned,
I think the mid-stays in the rear triangle contributed to this..I would be
very surprised if the new Platypus (updated Cheviot) is flexy.
