11 speed will be a two piece crank with an external bottom bracket. The
bottom bracket will come with spacers to fit 68 or 73 mm shells.

On a 7/8/9 you can also use 12 speed Sunrace cassettes. I would skip 11 and go
to 12 if buying today. Depending on what you ride and how much you really need

I just got two of the Canadian Wrestling Beanies from Rivendell in today's
post. They are amazing. Thin, but not too thin, super soft, stretchy,
comfortable merino wool, and can easily be worn above the ears or covering

If you want to save money, look at Chainreactioncycles. Their Shimano stuff
is often amazingly cheap. I'm guessing you could get an 11 speed crank,
shifter, derailer, and chain for <$250. Maybe less than $200, depending on
what's in stock.
