I had a similar problem. System would run for some number of hours and
then hang.
I believed this to be a heat problem with the motherboard. Replaced the
heat sink and the case (4 fans). I also had been running the xmatrix
screen saver which I disabled. So far things have continued to run.

Have you tried 'dmesg' to see what the kernel is "saying?" Also look at your boot.log files in /var/log
