Just go to Options -> Query tools and the set the Max. characters per column

As a note, today's pgAdmin , when it has a long string and you
"ctrl+c" copy it, gives you this in the clipboard:
data data data (...)
(the string "(...)")
Suggestion/feature request: "copy" the full data, so that we have a
way to get to it "all" at all.
