Because the old software isn’t available anymore… unless someone knows how
to extract it from the iPhone file of a Time Machine backup of my computer.

Short answer: iPhone
In the closed iPhone environment you can't just dig up the old version
from a torrent site and install it instead of the new version. If it
ain't in the Apple App Store you can't
