This didn't happen to me when I installed Sound Forge 8 but there are so
many options who knows what could happen on a given computer.

Its' a great sound editor, but overkill for a audio file player.

This still isn't making a lot of sense, since Sound Forge, either
demo or full version is not a player. It is a sound editor, and sound
editors do not make changes to your file types automatically.
What you should probably do is set Winamp to play all the file types

Before I installed Sound Forge 8.0, any sound file I opened would
be played by winamp 5, automatically.13.

What you are saying isn't making much sense here.
Winamp will still play your mp3s. The sound forge demo does not take
Winamp's ability away to play mp3 files. You just have to purchase
the mp3 plugin for sound forge so that you can edit them. Winamp
doesn't even fit into the equation here.
