After a reboot (ouch), the data is apparently fine and scrubbing shows
no problems, the machine continues to work perfectly until the next hang.

I know the configs that I edited to get the server like it is (cifs,
kerberos, idmap, snmp etc) but I don't want to wipe and then find I've
missed something critical to re-importing our data.

I copied some files from my memory-pen (some were folders), half of these
folder had this lock in the top corner. I copied the content into new folders
and deleted the 'locked' folders, but

You may have the disable_lock_screen gconf key set, using
gconf-editor check :
/apps/panel/global/disable_lock_screen
and ensure it is not set.
