+1 on that.
Also settings selections for Header of new or replied message BCC, CC
fields. Those actions seem to me a bit clunky and could use setting per
account as well. ⌘+Return is somewhat handy, but a default
setting/IMAP account might be better.

I have two Gmail accounts set up so far. In one, under Sent Messages,
what appear to be subfolders have appeared. I don’t know how or why

If you double-click on the "Sent Messages" mailbox, a window will come
up that lets you configure (among other things) the submailboxes. Just
turn them all off.

This is the picture of the screen mentioned. In my case I have no sub
mailboxes in my Gmail account, as you apparently have. So, rather than
delete them, you can turn them off selectively.

Then the submailboxes are sort by alphabet.

are not enabled in the settings, but I can not also delete each one.
Since the mails are in the "smart mailbox" (that's the name for the
folders) only **sorted by logic** and not physically - that means **no
space is waste
