Mailmate is no longer showing the sidebar on the left showing all the
configured mailboxes. How do I get it back and turn it off when I want to
focus on one mailbox?

Within Mailmate’s Main Window, on its Contextual Menu Bar,
View>Layout>Hide Mailboxes.
There is a shortcut also, ^⌥⌘D (control+option+command+D) to turn
Mailboxes on and off. Be sure your focus is on the correct (Main)
window.

My hard drive had to be wiped and the OS reinstalled, so I installed MailMate
ver 1.14 (5937). The good news is that it can now connect with the two MS
account servers for @outlook.com and @hotmail.com messages, which the earlier
