I need to copy a complete mail to another application.
I can select all the text, but is there a way to also have the headers
with the copy ?

In the message menu choose "Show in Finder", press Space to quick view,
Select All and Copy.

I need to copy a part of a subject kind of:
ex Subject: Serial: XHGFSTW - File: 509393 - Reference: 43467
I need to copy ex the serial of the file number to lookup this info in
another application.
Any idea how this can be done easily.

If you want the full header or to extract some parts of the header you
could change to "Show Raw Message" (ALT-CMD-U) as well.

I would like just the "text" From/Subject/Date/To headers included in a
formatted way just like one would double click an email.
