Yes, holding the option key on boot should bring up the Boot Picker, although
it is not accessible with VoiceOver. This process has also changed for the M1
Macs, although if you’re using BootCamp, then you are not on an M1. Sometimes,
the timing of holding down the option key is tricky.
Just to add a bit to this thread and clear up a possible misunderstanding.
I haven’t seen anyone mention Sound forge (now owned by Magix), Sound Studio or
Wave Pad.
It’s been a while since I’ve used these but they might be of help.

Did you disable the opsion to boot from external disks? You need to go into
the recovery and enable this to get this to work.
