Hi,
With this new mac, whenever I attempt to use the shortcut menu to remove an app
from the doc I am repeatedly sent to the finder. Is there something I am doing
wrong, or is it a quirky new thing with big sur?

It's a bug. It started in Big Sur version 11.1.
I did not notice it in the original 11.0 release of Big Sur.
