Yes. What you do is this:
You plug your phone in, arrow to it, go to the summary tab, make sure
"manually manage music" is highlighted. Then, arrow back to your phone
in the sources table, and expand it. Then arrow down to music. Then,
go to the songs table. Then, do a command+A to highlig

just interact with the songs table and uncheck the song you want to erase from
your phone. I'm assuming that your phone is set only to add songs and
playlists that are checked, since this is the default setting.

My music on my phone isn't organized, so I want to delete the music, only from
the phone, and not my Mac. How do I do this? I'm manually managing content
using iTunes.
