I suppose that depends on what you consider easy. Pandoc can generate EPUB 3
documents from any of the input formats it supports, including Markdown.

There is no specific command to insert headings into a Pages document. You have
to set a shortcut for each type of heading you wish to use and you can create
your own.
There are 8 available shortcuts that you can assign to paragraph or character
styles: F1 through F8.

hierarchical table of contents if you set different levels of headings.
Everything you want to show up in the table of contents for each heading should
all be on one line, and if it’s too long, use a line separator
