Thanks, I should have been more specific as I know how to do that on the
iPhone. My issue with editing notes is on the mac, as deleting words from a
note seems to work very strangely. Thanks again.

had totally missed it. I'd always avoided doing anything other than Select
all, because it was such a pain to try and select smaller chunks of text.

The first few words of the note are the note's label, or title. Use a return
symbol to end the title.
IOS 9 introduced a nifty new selection feature. Go to help, general,
accessibility, voiceover, rotor, and find select. Double-tap it to check it.
Now, select is added to the rotor.
