Alas I do not see an “All Junk” mail box while editing mail boxes on my iPhone.
I do see and have selected All Inboxes, All Archive, All Drafts, and All
Rubbish. On my iMac running the latest Bigsur I do see an “all Junk” mail box.

I believe you can find an all junk folder if you click the edit button at the
beginning of the list of folders.
It will show up in your list if VoiceOver says selected when you swipe to it.
