Once you've found the cell you want to edit, bring the mouse to it, then double
tap with one finger and you can edit it.

I believe the Numbers documentation, specifically the user manual is available
on Apple's site. It's in .pdf format, so a program like Preview will handle
this document.

I am also rather urgently looking for documentation on Numbers, a lot of my
work is done currently in excel spreadsheets, though due to my swich that
