I did as you said, and sure enough it was set to one week. I changed it to

I think I am using POP. I use MS Outlook on my PC, Windows Vista machine.

There are a couple of things you need to do:
Go to mail preferences, advanced tab, then check the box that says delete
messages from server, below that is another pop up that asks how often to
delete the messages. The default isn't immediately so if that's what you want
change that setting also
Are you using Pop or IMAP for your E Mail?
I have had the same problem when using IMAP on my Mac, and PC because Outlook
Express doesn't work well with IMAP.

Finally found it. For those interested it is in fact under settings, mail but
you have to click your account then go down to advanced. The delete from
server settings are there just as they are on the Mac.
