I guess Amadeus Pro would work to convert it over to Mp3, since that's my
preferred format.

convert mp4's to mp3's. and Also, vlc player might do it. the
process has too many steps for my taste, but it has a wide range of
formats it can convert from and to and its free so that might be an

Have you tried either Audio Hijack or DVD Remaster? I think m4v's have to be
converted to mp4s first but I'm not totally sure about that. I hope that helps.
I think DVD Remaster will extract the audio. A podcast on it is forthcoming
from me on my podcast site.
