With Gmail as your primary mail service, I would just turn off the JUNK
filtering in the Mail program. Gmail has the advantage of seeing billions of
e-mail messages and can usually do a better job at spam filtering then your Mac
can do.
If the messages are still going to junk after that, then
All you can do is to mark a message as “Not Junk” and that’s just about it.
