Select the fields you want to format. Then, go to the formatter and press the
cells radio button. Then in the scroll area you will find the data type pop up
button and some other related field such as how many decimal points for numbers
etc.

I used Numbers to open a spread sheet created in Open Office on Windows.
The date fields are being shown as:
05/D/.
I can’t find out how to edit the field type so that Numbers knows that this is
a date field.
